Cooking Instructions: Take out from the vacuum bag, leave at room temperature. Preheat the oven to 180°C. Transfer the Wellington to an oven tray with greaseproof paper. Cook for 40-45 minutes, or until the core temperature reaches 56°C for a medium-rare result and the pastry is golden brown. Leave to rest for 5 minutes before carving and serving
