Roast Lamb Shoulder with Fruit, Rice & Lemon Zest Stuffing, and Fresh Mint Jus
Cooking Instructions:
Preheat the oven to 180°C. Transfer the lamb to a roasting tin and roast it covered for 35-40 minutes. Then, uncover and cook for an additional 15 minutes or until the lamb is cooked to medium-well. Allow it to rest for 10 minutes before carving. Serve with Mint Jus.
