Slow roasted cap of Beef Rump (Picanha), Herb Rubbed, Honey & Thyme Jus, Yorkshire Pudding
Take out from the vacuum bag and leave at room temperature. Preheat the oven to 180°C. Pan-sear the meat on the pan from both sides and baste with butter. Finish in the oven for 45 minutes and cook to a core temperature of 56°C for a medium-rare result. Leave to rest for 5 minutes before carving and serving
Served pre-cooked sous vide at a core temperature of 44°C. Accompanied with a tub of honey & thyme jus and Yorkshire pudding
